Apple soup

Ingredients

  • 1 Tbsp (15 ml) butter
  • 70 g leek, sliced
  • 2 celery stalks, sliced (80 g)
  • 3 medium apples, peeled and diced (320 g)
  • 2 small potato, peeled and diced (100 g)
  • 3 cups (750 ml) vegetable broth
  • Salt and pepper

Preparation

  • In a large pot, heat butter. Sauté leeks and celery for a few minutes. Add the apples and potatoes. Sauté for about 1 minute. Add broth and bring to a boil. Season to taste.
  • Simmer until vegetables are tender, about 30-40 minutes.
  • Puree and season to taste.

Garnish (not calculated in nutritional facts) : parsley and julienned apple
