Julie Dumas's bread

Ingredients

  • 110 g Wel-Plan baking mix from Nutricia (1123)
  • 190g wheat starch (0454 or CBF 2203)
  • 2 Tbsp (30 ml) original powdered coffee creamer (Coffee Mate)
  • 6 Tbsp (90 ml) unflavored Metamucil (or 72 g)
  • ½ Tbsp (7.5 ml) sugar
  • ½ Tbsp (7.5 ml) traditionnal yeast
  • ¾ tsp (4 ml) salt
  • 350 ml of warm water
     

Preparation

With a bread machine

  • Place all ingredients in the bread machine at the dough function.
  • Preheat oven to 350 F (180 C).
  • Put the dough in a greased loaf pan.
  • Bake 35 to 40 minutes depending on the oven and on the gilding crust you like ... the bread sounds hollow when it is cooked.

Without a bread machine

  • Put water, sugar and yeast in a bowl. Let stand for 5 minutes.
  • Add in the remaining ingredients, stir well. As the dough is very sticky, mix well for a few minutes, because it is impossible to actually knead ...
  • Heat a cup of water in the microwave. Place the bowl containing the bread dough in the microwave (leaving the cup of hot water in) and let rise until the dough has doubled in volume (45-60 minutes). The microwave is the perfect place to let the dough rise. The cup of water helps to create a warm and humid environment.
  • Place the dough in a greased loaf pan, let rest for another 15 minutes in the microwave.
  • Preheat oven to 350 F (180 C).
    Bake the bread for 35-40 minutes.
  • To improve color, 10-15 minutes before end of cooking, you can brush the top of the bread with a little canola oil.
  • The bread is done when it sounds hollow.

The bread contains 35 grams of fiber! So a little more than 2 grams per slice.
